Mahi Mahi with Harissa

Ingredients
- 1/2 tsp cayenne pepper
- 1 (12oz) jar of roasted red peppers
- 1 clove of garlic
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 1/2 tsp cumin
- Salt and Pepper
- Mahi Mahi fillets, or any other desired poultry, fish, or steak
Directions
- In a blender add all ingredients except salt and pepper, make sure to drain the juice from the roasted red peppers
- Blend until all ingredients are pureed
- Add salt and pepper to taste if needed
- Lightly season the fish with salt and pepper
- To cook the fish heat a pan on medium high with light oil
- Place the Mahi Mahi skin side down in the pan, cook until this skins are lightly charred and crispy
- Turn over fillets and cook for an additional 2 to 3 minutes until fish is thoroughly cooked. When cooked the fish should easily flake with a fork
- Serve Harissa on desired dish, i.e., Mahi Mahi, Chicken, or steak. This sauce is a North African pepper sauce and can be complimented with black beans and rice
