    Mahi Mahi with Harissaharissa1

    Ingredients

    • 1/2 tsp cayenne pepper
    • 1 (12oz) jar of roasted red peppers
    • 1 clove of garlic
    • 2 tbsp olive oil
    • 1 tbsp red wine vinegar
    • 1/2 tsp cumin
    • Salt and Pepper
    • Mahi Mahi fillets, or any other desired poultry, fish, or steak

    Directions

    1. In a blender add all ingredients except salt and pepper, make sure to drain the juice from the roasted red peppers
    2. Blend until all ingredients are pureed
    3. Add salt and pepper to taste if needed
    4. Lightly season the fish with salt and pepper
    5. To cook the fish heat a pan on medium high with light oil
    6. Place the Mahi Mahi skin side down in the pan, cook until this skins are lightly charred and crispy
    7. Turn over fillets and cook for an additional 2 to 3 minutes until fish is thoroughly cooked.  When cooked the fish should easily flake with a fork
    8. Serve Harissa on desired dish, i.e., Mahi Mahi, Chicken, or steak.  This sauce is a North African pepper sauce and can be complimented with black beans and rice

    Elaine’s Amazing Marinaderoast

    Ingredients:

    • 1 roast (or meat of choice)
    • meat tenderizer (if necessary)
    • 2 tbsp white vinegar
    • 1 tsp pepper
    • 1/4 cup soy sauce
    • 2 tbsp dry mustard
    • 2 tbsp lemon juice
    • 1/2 tsp parsley
    • 4 tsp worcestershire sauce
    • 1/2 clove garlic

    Directions:

    1. Combine all ingredients
    2. Pour over roast and let stand for 12 to 24 hours
