    Mahi Mahi with Harissaharissa1

    Ingredients

    • 1/2 tsp cayenne pepper
    • 1 (12oz) jar of roasted red peppers
    • 1 clove of garlic
    • 2 tbsp olive oil
    • 1 tbsp red wine vinegar
    • 1/2 tsp cumin
    • Salt and Pepper
    • Mahi Mahi fillets, or any other desired poultry, fish, or steak

    Directions

    1. In a blender add all ingredients except salt and pepper, make sure to drain the juice from the roasted red peppers
    2. Blend until all ingredients are pureed
    3. Add salt and pepper to taste if needed
    4. Lightly season the fish with salt and pepper
    5. To cook the fish heat a pan on medium high with light oil
    6. Place the Mahi Mahi skin side down in the pan, cook until this skins are lightly charred and crispy
    7. Turn over fillets and cook for an additional 2 to 3 minutes until fish is thoroughly cooked.  When cooked the fish should easily flake with a fork
    8. Serve Harissa on desired dish, i.e., Mahi Mahi, Chicken, or steak.  This sauce is a North African pepper sauce and can be complimented with black beans and rice

    Catfish Tacoscatfish-taco

    Ingredients

    • Basa catfish fillets (as many as desired)
    • Cajun seasoning
    • Sour cream
    • Chipotle sauce
    • Cabbage
    • Tomatoes
    • 1 tbsp olive oil
    • White corn tortillas

    Directions

    1. Make sure the fish is free from bones, then season the fish with the cajun seasoning
    2. Chop tomatoes and cabbage in desired amounts
    3. Mix the chipotle sauce with the sour cream.  Add the chipotle sauce as desired, be careful some chipotle sauces have a huge after burn that is not noticed in the initial tasting
    4. On a stove top heat a frying pan on medium high with 1 tbsp of olive oil (assume 1 tbsp for every fillet being cooked in the pan)
    5. Cook the fish evenly on both sides
    6. This fish will easily flake with a fork when completely cooked
    7. Dress the tortilla with the cabbage, tomatoes, fish, and chipotle sour cream
    8. Serve this by itself or compliment it with black beans
