Layered Beef & Vegetable Casserole

Ingredients
- 1 1/2 lbs of ground beef
- 1 cup chopped onion
- 1 cup green pepper (chopped)
- 2 tsp salt
- 2-3 potatoes (peeled & sliced)
- 1 cup thinly sliced carrots (coins)
- 1/3 cup long grain rice (uncooked)
- 1 28oz can of crushed tomatoes
Directions
- Preheat oven to 350 degrees
- Saute ground beef, onions, and green peppers together until beef is browned
- Drain Fat, add salt mix well
- Place sliced potatoes in bottom of 2 1/2 quart baking dish
- Alternate layers of carrots, rice, and meat
- Pour crushed tomatoes over casserole, cover
- Bake for 2 hours
