Layered Beef & Vegetable Casserole

Ingredients

  • 1 1/2 lbs of ground beef
  • 1 cup chopped onion
  • 1 cup green pepper (chopped)
  • 2 tsp salt
  • 2-3 potatoes (peeled & sliced)
  • 1 cup thinly sliced carrots (coins)
  • 1/3 cup long grain rice (uncooked)
  • 1 28oz can of crushed tomatoes

Directions

  1. Preheat oven to 350 degrees
  2. Saute ground beef, onions, and green peppers together until beef is browned
  3. Drain Fat, add salt mix well
  4. Place sliced potatoes in bottom of 2 1/2 quart baking dish
  5. Alternate layers of carrots, rice, and meat
  6. Pour crushed tomatoes over casserole, cover
  7. Bake for 2 hours
