Lemon Bars

for crust

  • 1/2 cup sliced almonds (set aside 3 tbsp)
  • 3/4 cup flour
  • 1/3 cup powder sugar
  • 1/2 tsp almond extract
  • 1/4 tsp salt
  • 6 tbsp unsalted butter chilled, cubed


  1. Preheat oven to 350 degrees
  2. Line a square 8 inch pan with foil
  3. Toast almonds in a skillet over medium heat for 3 to 5 minutes until lightly browned
  4. Whisk together flour, sugar, almond extract, salt, and chopped almonds
  5. Cut in butter with a dry fork until mixture is crumbly
  6. Press into the baking pan
  7. Sprinkle the remaining almonds on crust
  8. Bake until edges are golden, about 20 to 25 minutes

for filling

  • 1 cup sugar
  • 3/4 cup flour
  • 3 eggs
  • 1/2 cup fresh lemon juice
  • 2 tsp lemon zest, finely grated
  • powder sugar for dusting


  1. Combine sugar flour, and whisk in eggs
  2. Add lemon juice and zest
  3. Pour over warm crust, and dust with powder sugar
  4. Return to oven, and bake until filling no longer jiggles in center; about 18-20 minutes
  5. Cool completely on rack
  6. Remove from pan by lifting on foil
  7. Cut into squares and dust with powder sugar
