Banana Bread

  • 2 cup flour
  • 1 1/4 cup walnuts coarsely chopped
  • 1/2 to 3/4 cup sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3-4 ripe bananas mashes (1 1/2 cups)
  • 1/4 cup yogurt
  • 2 eggs beaten lightly
  • 6 tbsp butter – melted and cooled
  • 1 tsp vanilla


  1. Preheat oven to 350 degrees, make sure oven rake is in the lower middle position
  2. Grease 9x5x3 inch pan and dust with flour
  3. Spread walnuts on baking sheet until fragrant (5-10 minutes)
  4. Whisk flour, baking soda, sugar, walnuts, and salt in large bowl, set aside
  5. Mix mashed bananas, eggs, yogurt, butter, and vanilla with a wooden spoon in medium bowl
  6. Lightly fold banana mixture into dry ingredients until just combined – batter will be thick and chunky
  7. Place batter in a loaf ban and bake until golden brown, and toothpick inserted in the center comes out clean
  8. Cool in pan for 5 minutes, then place on cooling rack
