Pecan Cake

Ingredients

  • 1 1/2 cup butter
  • 2 cup brown sugar
  • 1 cup white sugar
  • 6 eggs (separated)
  • 2 oz lemon extract
  • 4 cup flour
  • 1 tbsp baking powder
  • 4 cup chopped pecans
  • 1 lb chopped raisins or dates
  • 10 oz chopped maraschino cherries – retain 1/2 cup juice

Directions

  1. Cream butters and sugars well
  2. Add egg yolks one at a time and beat well
  3. Stir in lemon extract
  4. In a separate bowl combine flour, baking powder, nuts, cherries, and raisins or dates
  5. Add ingredients alternately with cherry juice, mix well
  6. Beat egg whites until stiff
  7. Fold in egg whites
  8. Spoon mixture into ungreased bundt pan or tube pan and bake to 21/2 to 3 hours at 275 degrees
  1. If baking in smaller pans reduce bake time to 1 1/2 to 2 hours
